Dirty Rice
Dirty rice is a traditional Cajun and Creole dish that is made from white rice and a variety of ingredients such as liver, onions, green peppers, and celery. It gets its name from the 'dirty' appearance the rice takes on from being cooked with these ingredients.Dirty rice is a flavorful dish that is high in protein and carbohydrates. The liver in dirty rice is an excellent source of iron, vitamin A, and vitamin B12. The dish is also a good source of fiber, vitamin C, and vitamin K from the added vegetables. However, due to high sodium content in seasoning blends and sauces commonly used, it is important to watch the salt intake when consuming dirty rice.
